Sausage and Rice Dressing

Ingredients

1 cup Blue Ribbon® White Rice
2 Tbsps olive oil
1 cup onion, chopped
2 each minced garlic
1/2 cup celery, chopped
1/2 cup carrot, diced
1 red bell pepper, chopped
1 can (12 oz.) whole kernel corn, drained
2 pkgs (12 oz.) chorizo, casing removed
salt and ground black pepper, to taste
1/2 cup chicken broth
3/4 cup green onion, chopped
2 Tbsps fresh sprigs of thyme

Cooking Directions

Prepare rice according to package directions. While rice is cooking, heat olive oil in a large skillet. Sauté onions, garlic, celery, carrots, and bell pepper until tender. Add corn and sausage, cook for 10 minutes. Fold in cooked rice; fold in remaining ingredients, continue to cook until heated through.
