Sweet and Sour Rice Pudding

Ingredients

1 cup Blue Ribbon® White Rice
1 1/2 cups water
1/2 tsp salt
3 cups milk
3/4 cup sugar
3/4 cup sweet and sour sauce
1 cup pineapple tidbits, fresh or canned
whipped topping

Cooking Directions

Combine rice, water and salt in a 3-quart saucepan. Bring to a boil and the reduce heat to a simmer. Cover and cook for 15 minutes.

Add the milk and sugar and cook for 30 minutes more at a simmer, stirring occasionally. Rice should be thickened. If it is not thick enough, cook an additional 10 minutes, stirring occasionally.

Stir in the sweet and sour sauce and pineapple and refrigerate. When ready to serve, cover with the whipped topping.
